People often spot light "dry on tree" methods as special, but it seems ordinarily method in Brazil. Brazilian coffee is often characterized by clean and clear aroma: one of the highest quality in the world, but "average" without strong character. "Dry on tree" is the method to process coffee without fermentation, or with less fermentation. Matured red beans has high moisture value so Brazilian cultivator reduce the moisture level by "drying" the red beans on the tree to avoid risk of fermentation in processing. Somewhat, this beans has some nutty and rich flavor profile reminds me of Guatemala. Brazilian coffee always "A-students" like good one but this has a stand out character to catch my attention.

In 2010, as far as I remember, Piatã represented the prestigious first place with Catuai variety, the high-yield of Mundo Novo and Caturra originated in Brazilian laboratories.
There are many micro-farms cultivating high quality cherries in this area. Some of them produces several hundred sacks of coffee each year. Most of them are well maintained, hand picked and processed by traditional brazilian methods, which enhances flavor of the beans. People often think nothing special about Brazilian coffee, but now Piatã elevates the value of Brazil in the market. Certainly it tastes coffee and have soothing aroma, but does not leave “impression” or after taste, just like having green tea. This light flavor coffee may fit with occasions and can pair with any foods.

【Impression】
Medium to heavy body, clear aroma. Light fine acidity of citrus, soothing but rich bitterness, dark caramel like sweetness as aftertaste. Layers of bitterness and sweetness with lemony flavor on top. Well-balanced, typical "BRAZILIAN" coffee flavor, but may good for espresso.

COOPFAM is originally organized in 1991by small scale farmers of Poco Fundo to promote cooperation between them and to improve their own quality of life/products. This organization produces about 12,000 bags per yr from 300,000 plants of Arabica trees. Their products achieved the first prize in Brazilian Fair Trade Coffee Cupping cometition of 2008, and which has added higher value to their coffee beans ever since.
Originally, this cooperative is formed from collective desire of small sized farmers to improve the living standard of farmers and to reduce poverty and emigration, and now they are succeeded not only to achieve their first objectives but also to increase the productivity as well as to sustain the quality of family-oriented agriculture in the region.

Soothing medium body, airy texture. Smooth bitterness with a caramel like sweetness thinly layered on bottom, no notable acidity specified. Bitterness as core flavor but clear and fine aftertaste.

Clear, fine, light touch coffee with well balanced flavor.
This farm has been providing amazingly stable quality of coffee beans since the first time I had their cup. Mild but sensitive flavor with medium body, well balanced sourness, body, and aroma.
Referring to my knowledge of Recanto Estate, this estate is RA, Rain Forest Alliance, certified and is fully engaged in eco farming, conservation of ecosystems, developing recycling process throughout production. Workers are educated to be eco conscious, motivated to participate in environmental protection as well as farming skills.

As its name shows, Mondo Novo is fully ripened and dried on tree, nourished and sweetened, before harvesting. Harvested coffee cherries are stored and matured in TULHA, a wooden storage, for 45 days without sun-dry process, which enhances sweetness of dried on tree cherries.

This beans soon became one my favorite and regular. Now, there is 2kg of green beans sitting, ready to be roasted. Depending on a roaster, this beans dramatically changes its taste, especially degree of sweetness.
