CENFROCAFE is a cooperative formed by over 2,100 small-scale coffee farmers located in twelve districts within the region of Cajamarca.  Originally, this coorperative was founded in 1999, started with 220 farmers from eleven community -based association.  After more than ten years, Their coffee are well recoginzed for the quality.  CENFROCAFE has been taking efforts not only to improve quality of their coffee production but also to improve their member service including health, education, and other social services.



【Imression】
Light to Medium body, refreshing flavor, airy touch/texture.  Smooth and well-balanced, caramell like sweetness with lime like light acidity.  Making a cup darker, matured plum like deep sweetness comes with a touch of light acidity.   

Sweet and light at a first sip.  Flavorful aroma gradually grows with a slight sourness once it reaches to throught.  Rather light, a good cup in early sumer morning.

I prefer to have this cup w/o milk/suger, w/ cinammon raisin bagels with a bit of "Earth-balance".



Overall, roasting of "The coffee market" is OK, although any of their samples does not impress me enough this time...  Certainly, they roast beans on order base, so there is no doubt with freshness of packages delivered.

【Roasters Comment】
Well harmonized taste: Dark well matured flavor with refreshing sourness and long lasting aftertaste.  .
"La Cupula" is located in Filadelfia Estate, one of the best  recognized estate in Guatemala.  "La Cupula" is name given to the limited area, between altitude 1650m to 2100m, the highest range of the estate, where only the Bourbon variety is grown.
They have respectful passion to produce higher quality coffee, such is using bricks for drying area, for example.   From the temperate climate to soil, naturally given factors allow and give its distinctive flavor and aroma to their coffee.


【Impression】
Light body, bright, cooling taste.
Hibiscus&Lemon like flowery aroma, lime like refreshing sourness with the first sip.  Bitter Cocoa flavor, but mild, with citrus sourness,  lasting aftertaste of sourness.    This Beans varies impression, especially flavor, by methods for brewing.  The quality and flavor of coffee is not only determined by the brewing process, but also beans selected.  This cup, however, varies very much by methods.  The most common methods, Cafe-press and Paper filter drip, give completely different cups.  Even paper filter drip, flavor varies by water temperature. 

Coffee brewing is art.  It seems Simple and easy at the first look, but there are millions factor to brew a cup fits your taste....
