Global wise, Costa Rica is a small country producing coffee beans but blessed with idealistic environments, such as soil, altitude, rainfall, temperature. Since the majority of Costa Rican coffee beans are produced by micro- farmers, the total annual production remains small.  However, these micro-famers are taking efforts in developing quality to produce high grade coffee beans, so called specialty coffee, in addition to developing whole process of processing, milling.
Puente Tarrazu mill, Beneficio Ecologico Puente Tarrazu, is one of those micro-mills, which processes original Typica varietal with Pulped natural method, especially called Honey method. 
※ Beneficio Ecologico Puente Tarrazu is a coop mill of 12 small producers/farmers including 2008 COE winning farms and offers Caturra and Typica varietals.


【Impression】
Medium mild body, smooth light texture.  Floral aroma like honeysuckels, papaya like sweetness with bright and sweet acidity, nutty flavor with a tinght of bitterness.  Good for summer morning cup, soothing and refreshing even good for iced coffee.  Recommended black with maple nuts, or something simple and naturally sweetened with maple syrup.

【Comment of roaster】
This 100% Bourbon, traditional varietal, offers high quality, sweet aroma mixed with mild sweetness and acidity, which has won the first position in COE of El Salvador in 2003.
 

【Impression】
Light to Medium body, bright acidity with airy texture.  Floral and fruity aroma like orange flower, with well-balanced acidity and bitterness.  Mixture of high tone acidity, rose hip with lime, and earthy bitterness, 100% cacao dark chocolate, with sheer sweetness underneath, total flavor balance like green-raisins .  After taste: clear lemony acidity with long-lasting bitterness.
This beans is selected by ITZALCO, El Salvador specialty coffee association. speciality.  This package had their tag on top, but this picture does not show the tag...  Sorry....

【Impression】 
    Medium to semi-dark body with dense but light texture.  Aromaful, spicy fruit flavor, comfrotable bitterness of dark chocolate, sweetness and shy acidity of matured green grapes, with clear aftertaste.  Food-pairing: Coconuts cookies or something coconutty taste sweets. 


【About this coffee farm】
    Finca Santuario is specially designed farm to grow single varieties from the beginning and offers wide varieties not only available in Columbia, such as Caturra and Catuai, but also very rare and sensational varietals such as Old Typica,and Original Bourbon from other regions.  The farm has became world-class coffee producers with outstanding quality, even located in the Popayan highlands, the heart of Cauca department. 


    In 1999, the owner of Finca Santuario, Mr. Camilo Merizalde, started very interesting project.  He started to resurrect good old Colombian Mild coffee over 30 years ago under completely sustainable conditions.  In 2005, the firm celebrated the first commercial harvest: 100% Typica.  Since 1999, Santuario Estate has planted not only specialty coffee but herbs and fruit trees and been working to make sustainable farm that is environmentally friendly through preserving the environment, beekeeping and ecotourism.

Extremely light body, early summer morning breeze in a high up hill like light feeling.  Citrus sourness in aroma, nutty flavor, lightly roasted pecan nuts like, combination of mild sweetness and a touch of light sourness in flavor/aftertaste .  Sweetness may similar to well matured gooseberries.  On one hot mid summer wind-less day, this coffee may bring refreshing cool breeze.

Koruri Coffee Part2

The second order from Koruri Coffee, since the last Brazil seized my heart and gave the best release to my morning mind.   
 Besides my favorite Tomio Fukuda - dried on tree, there are my selections from Koruri Coffee's recommendation.

There are Kg of coffee to satisfy my cravings.
Sometimes, "JAVA" inhabitant of my mind gets crazy and active to do things like this....



Tomio Fukuda, dried on tree, second order.

 Tomio Fukuda Dried on trees, aromatic Brazilian beans from Fazenda Bau offers me a moment to breath in the morning.  My preference of Brazilian Coffee is reactivated especially with change of seasons, Winter to Spring.

 Any of beans from La finca Tmio Fukuda will meet my expectation with well developed and balanced typical Brazilian Flavor and will guarantee full satisfaction and boost in the morning. 

  This is the Brazilian Specialty coffee to start with as daily choice!!

GREENS Coffee Roaster


Here is a hidden and sacred coffee roaster; hidden in terms of location, but not in terms of its popularity.

Greens Coffee Roaster is owned by Yasutaka Iwao, a skilled coffee roaster as well as the best SYPHONIST of Japan Barista Champion ship in 2001 and 2004. 
They closed the café section on Nov. 30, 2010, and have focused on coffee roistering/retailing from Dec.1 2010, so that Mr. Iwao rarely entertains us with his SYPHON technique and flavorful coffee now.  However, his decision on focusing on roasting business seems successful.
Although blend Coffees at Greens Coffee were well-known for a long time, they seem to have established a higher reputation since Dec. 2010.  Is it because Mr. Iwao has more time to spend with his PROBAT, German roasting Machine, or beans he selected??  There is a good enough room to play with imagination over Greens Coffee and its uprising qualities, but, besides that, it is pure pleasure to find wonderful coffees and an unmistakably wonderful roaster.  

Greens Coffee roaster sells freshly roasted single beans, so called, Specialty coffee, as well as variety of blend beans.  Greens Blend is the best for morning, especially on hot summer mornings, with its soothing taste.  Moto-ko Blend is bitter but good for Iced-coffee or latte.

Althugh Kobe is one of the best place for cafe/coffee roaster hopping and has a number of good coffee raosters, Greens coffee roaster will save your time for serching "THE BEST" coffee beans.

Medium-light body with depth, silky texture, light citrus & cacao aroma. 
Bitter-sweet with citrus acidity hidden.  Chocolate, torinitarian cacao, like flavor.  hazel nuts butter like nutty creamy sweetness, light lemony acidity blended in, light bitterness as bottom note, mellow acidity to finish.

Sorry for farmers, the name of Estate/Mill is forgotten...
