【Impression】
Clear, fine, light touch coffee with well balanced flavor.
This farm has been providing amazingly stable quality of coffee beans since the first time I had their cup.  Mild but sensitive flavor with medium body, well balanced sourness, body, and aroma.



















Referring to my knowledge of Recanto Estate, this estate is RA, Rain Forest Alliance, certified and is fully engaged in eco farming, conservation of ecosystems, developing recycling process throughout production.  Workers are educated to be eco conscious, motivated to participate in environmental protection as well as farming skills.

Unlike normal coffee beans, "Peaberry" has one bean developed within a single cherry, which has a round/oval, like Pea, shape, and small in size.

In the early sixteen century, the coffee trees are planted and grown between 4500 to 5500 feet in altitude of Volcan de Agua, Mt. Agua, and other volcano es surrounding Antigua, the former capital of Nicaragua, where are blessed with rich condition: volcanic fertile black soil, well balanced sun-light and shade and stable rainfall throughout a year, and f ine quality and well sized beans are grown.
After Coffee cherries, selected by the Pastores Mill of Vol cafe, are hulled, 100% naturally fermented, and washed, they are sun dried and cupped by rots.  This cupping process categorizes and grades beans by color, cupping, size, and etc., which enables to introduce  higher quality beans into the market.  Moreover, beans are hand-picked by over 100 women/rot before bagged to export, with a special emblem on a jute bag.  This coffee provides the highest quality in terms of well established/balanced body, aroma, and sourness.

Excellent fruity cup.  Light, smooth body, fruity flavor.  Summer breeze like soothing taste.  Light and unique, which requires well developed coffee b rewing technique to serve stable quality of coffee.  Might require special attention on water temp. and grinding process.

Light refreshing flavor with sourness of limes and yuzu, on top of thin layer of bitterness.  Orange like aroma, light but balanced body.

Earthy, full-bodied dark coffee with chocolate flavor.  Awakening wonderful aroma, sweet and flavorful, well balanced taste of orange like sourness, Madagascar cacao beans like sweetness.
Although this cup gives strong impression, aftertaste is very clear.
Prefer to have this as an afternoon cup on very relaxed weekend.

Layers of rich, mild taste with nuts like flavor.  Sourness cannot be detected, but well harmonized rich full flavor satisfies and entertains  coffee geek like me.
Prefer to have this as an afternoon cup, or early evening cup, but it will fit any time of the day!
This beans turns me into a huge fun of old coffee, even more!

"LECHE" means "milk" in Spanish.  I tasted with doubt, however the cup gave me smooth and mild impression like milk.  I questioned, "Who has the best coffee beans?"  This beans are worth trying.

Very strange.... 
Smooth, light texture and flat flavor w/o sourness.
Among any impression given , "Strange" came up as first comment...Sorry.
This cup needs to be selected when you get tired of Coffee but do not feel like drinking tea, water or anything else.  I prefer not to introduce this as "COFFEE", even no wonder this is.

"Honey Coffee ", so called, gains its popularity and often shows up in cupping as well as COE.   Unfortunately, not good enough acknowledged, the world of HONEY coffee has turned as the wonderland.

Nama-mame Honpo

Nama means Raw and Mame beans in Japanese.  As the name shows, this coffee beans shop sells variety of green beans from all over the world.  The owner is a J.C.Q.A certified coffee instructor, so any advices are available on home-roasting.

Roasted beans are also available on request.

Blend of Columbia, Brazil, Guatemala, added to Base Blend, S.P.MIX. S.P.MIX is the blend of highly matured beans, that recipe has been kept as the highest secret since Cocktail-Do was established and allowed only to the Master blenders.  Old 5 is Cocktail-Do’s the most popular and longest selling blend coffee. 

【Impression】
Well established, dark and full body coffee.  Creamy and silky, texture with harmonized bitterness and sweetness like Belgium Chocolate.  No sourness detected even a cup got cold…  Taste like “cognac”, if I compare this coffee to alcoholic drinks, while fresh beans like beer.  This aromatic coffee brings soothing, wonderful aromatic comfort, but I prefer to save this to the last, special moment.


For some people, this coffee might be too dark to drink as black....  It may taste good with milk and sugar, but my recommendation is to add a little amount of hot water to make your cup thinner and serve with something very very sweet and rich items, Sachertorte, Vienna’s Chocolate cake.
