                   Fully matured beans are washed,
                   sun-dried on patio to 12% of water amount.

【Roaster's Comment】
Full flavored mild cup with light body, less bitterness, mild acidity.

【Impression】
Medium Body, bright and clear taste, airy texture.  Charcoal like bitterness from roasting, not from beans, but clear and sharp taste with a touch of lemony acidity hidden.  Sweetness of matured berries adds smoothness and softness to coffee flavor.  ANDES MOUNTAIN might fit better with lighter roasting grade, like light or city, since beans itself has thin and light flavor with light acidity.  This may fit with Vietnamese coffee serving methods.

Tove Blend

【Impression】
Dark body with creamy, silky texture.  Nutty, almonds like aroma mixed with citrus, lime like sourness and Jasmine like flowery aroma.  Bitterness as core flavor, light acidity and sweetness of grape, with bitter but nutty short aftertaste.

Good for Cafe au Lait or Cappuccino sweetened with honey.  Not surgery sharp sweetness, but mild natural sweetness might fit well with this coffee. 
 
【Note】PUSSY PUSSY-na's beans are somewhat fit better with Manual coffee grinder, cone type grinder, than blade grinder .  I usually use a blade grinder but, with PUSSY PUSSY-na's beans, I always ended up with having "whole beans", un-ground beans, left in powdered beans.

【Impression】
Clear and light body, Floral jasmine like aroma, airy soothing texture.  Ruby grapefruit like acidity mixed with goose berry, apricot sweetness with a tip of honey, short and light aftertaste.  Delicate feathery touch of bitterness after well harmonized thick layer of citrus acidity bottomed with mellow sweetness.
Soothing and refreshing for early morning, w/o milk and sugar .  No food pairing recommended since this cup is to enjoy taste of coffee.
2nd Cup brew with Kono Method: Light Medium body, silky texture, berry like aroma.  Fresh fruit sweet ness with nutty fragrant flavor , mellow El Salvador Cacao and chocolate like flavor as finish.

【About Muyongwe washing station】
Muyongwe is a washing station has been built as a part of Tuzamure Kawa cooperative system in 2006, located in the Gakenke district of the Northern Rwanda Province.  The coffee at Muyongwe is processed in the Kenyan style, meaning they de-pulp, separate quality by weight, ferment for 12 hours, wash vigorously 4-5 times, ferment for another 12 hours, wash, separate quality by density, and then soak for 24 hours. Finally, the coffee is dried on raised beds.
In 2007, Muyongwe earned the first place in Rwanda Golden cup and earned a reputation for its high quality.  Since then, Tuzamure Kawa has become the core member in COE competition.

PUSSY PUSSY-na

 
The very First beans from PUSSY PUSSY-na Coffee in Takamatsu, Kagawa. 

The package came with a hand-printed postcard, hand written message on the back.  Everything in the package was so cute and heartwarming!!  
There are thousands of coffee roasters and cafes in Japan lately, some focus on "Specialty coffee" and some "old good Cafe style.  Pussy Pussy-na has both characteristics together with a new feature: Art gallery.    
Surrounded nice pieces of art, photos, paintings, and etc., specialty coffee must taste wonderful and relaxing. 


Not visiting the actual store, I picked 3 different coffee beans out of the list.
Yemen, Ecuador, House Blend: “Tove Blend”

Tove Blend is named after by Tove Jansson, a Finnish writer!!
Moomin lives my childhood and so does the owner’s heart.
For your first shipment from new coffee roasters, it might be better to ask for "samplers" but, if the roaster is own by someone has grown up with Moomin, there is no doubt everything is tasty.

【Impression】
Medium body, transparent clearness with depth, light texture, orange flower mixed with citrus aroma, moderate and well balanced flavor, decent acidity.  Citrus flavor with mild chocolaty bitterness like dark chocolate  and flavor in depth, sharp apricot sweetness mixed with ripe white grape, fruity thin layer of sweetness lightly covers well polished bitterness, sweet bitterness as a long lasting aftertaste.   


Thanks for Akaimi coffee, bland new aspect of El Salvadorian coffee has been opened by combination of this beans and roasting technique.

【Impression】Rich full body, smooth velvety texture, earthy grounded aroma with citrus fruits with black pepper, mild and delicate acidity as lemon, cacao like bitterness bottomed with rice molts sweetness, well-balanced strong flavor, bitterness cored with high acidity as long lasting aftertaste.  Suitable for drinking throughout the day, it can be enjoyed with or after most foods. It will prepare in all coffee makers. Serve black or with cream or hot milk.

The Tanzanian coffee is often categoraized Central/Eastern African bright and flavorful coffee in terms of flavor.  Blessed with Volcaninc soil, Tanzanian coffee has full, rich flavor but clean cup, and zesty, competing Kenya's in specialty coffee market.  Quality of Tanzanian coffee has been improved, and now still improving.
