Blend of Columbia, Brazil, Guatemala, added to Base Blend, S.P.MIX. S.P.MIX is the blend of highly matured beans, that recipe has been kept as the highest secret since Cocktail-Do was established and allowed only to the Master blenders.  Old 5 is Cocktail-Do’s the most popular and longest selling blend coffee. 

【Impression】
Well established, dark and full body coffee.  Creamy and silky, texture with harmonized bitterness and sweetness like Belgium Chocolate.  No sourness detected even a cup got cold…  Taste like “cognac”, if I compare this coffee to alcoholic drinks, while fresh beans like beer.  This aromatic coffee brings soothing, wonderful aromatic comfort, but I prefer to save this to the last, special moment.


For some people, this coffee might be too dark to drink as black....  It may taste good with milk and sugar, but my recommendation is to add a little amount of hot water to make your cup thinner and serve with something very very sweet and rich items, Sachertorte, Vienna’s Chocolate cake.

Patos de Minas has significantly defined dry-season and wet-season in Cerrado area, which is the most desirable environment for coffee cultivation. Mundo Novo Dried on Tree is grown and blessed with this wonderful environment.
As its name shows, Mondo Novo is fully ripened and dried on tree, nourished and sweetened, before harvesting. Harvested coffee cherries are stored and matured in TULHA, a wooden storage, for 45 days without sun-dry process, which enhances sweetness of dried on tree cherries.



【Impression】
Impressive aroma and sweetness. Dark and clear/light sweetness with a tip of bitterness, but clear after taste. Flavorful, well balanced/harmonized bitterness, sweetness, aftertaste without sourness. Full and rich fragrance!


Good for afternoon coffee. For food pairing, Almond tuiles, thin, crispy, flavorful and light taste, but not too sweet almond cookies, is recommended. Heavy sweets, such as cakes with whip cream or full flavor American cookies may kill coffee flavor.
This beans soon became one my favorite and regular.  Now, there is 2kg of green beans sitting, ready to be roasted.  Depending on a roaster, this beans dramatically changes its taste, especially degree of sweetness.

Mild Blend

ColumbiaBased, Guatemara and Blazil origin beans blended.  Adding medium-roast green beans, a cup gains flavorful, rich body.


【Impression】  Moderate, well balanced mild coffee.  Richer and more flavor for roasting grade.   Mille-feuille like layer of different flavors, sweetness, light bitterness and tint of sourness, harmonize to develop richness in body.  Wonderful morning cup, but less impact as OLD COFFEE.  For light-taste coffee, such as Peru, lovers, this cup will bring different impression and might stimulate curiosity for old beans.               
If you have certain expectation to tour Aged/OLD Coffee World, I recommend to pick something else rather than this blend coffee.  To be honest, there is nothing can be comapred with coffees at Cafe de L'ambre...I believe, although, as this empty bag shows, this beans were gone quickly enough to prove how good they were :)
