Here is the Honey processed Finca La Virgen, Catura and Burbon, sampler with different processing methods.
To be honest, it is hard to tell the difference.
There is difference, certainly, but not many can tell the factor(s) of "the difference" they feel now. Honey process is categorized semi-washed, also commonly known as pulped natural, which considered to add "richer" flavor to coffee. Once cloud of specialty coffee fans swung to "natural process" side, saying "natural processing methods add full flavor to coffee." Maybe what they said was true, minus not many are blessed to have that high sensitivity of taste buds.
This is just experiments for seeking better flavored cups.
The process methods always varies by regions, often by varieties, and often depends on the facilities the washing station has. Specialty coffee movements helped some growing regions to move back to traditional methods and appreciates slower process. Challenging own taste buds and "trend creators" sometimes entertaining,

If you are blessed with flavor sensitivity, you might feel vague difference with blind test. However, personally, I think someone who can detect this difference exactly may be the the top skilled Classificador.
